Apple ring pancakes! Tastes like hot apple pie in pancake form. Instead of adding diced apple to the batter, slice the apple into rings and double dip! The apples stay slightly crunchy, which is the perfect contrast to the soft cinnamon-y pancake!
Apple Ring Pancakes
1 small apple, cored and sliced thinly
1/2 cup oats, blended into flour
1/4 tsp cinnamon
1/2 cup milk or hot water
Pecans or walnuts
Mix together oats, cinnamon, and milk. Dip the apple slices in the batter then cook. When cooked, dip again and cook once more . Serve with yogurt and chopped walnuts and more apple.
