I don't make oatmeal all that often, but the sudden chill had me craving a hot, steaming bowl for breakfast. I looked around my house for some ideas, and uncovered apples, all kinds of nuts, goji berries, and a slab of red sugar. I'm a fan of apples, walnuts, and sugar together, so I decided to base my oatmeal on these ingredients.
The aroma of freshly grated red sugar, walnuts, raw oats, and sliced apples is absolutely tantalizing. I think some cinnamon, grated ginger or any other warming spices would pair nicely with this recipe as well! You can even saute the apples in coconut oil and cinnamon before adding to the oatmeal for even more flavor! I'm not a fan of warm fruit but if you are it sure sounds delicious.
Apple Walnut Oatmeal Recipe
Serves 1 or 2
2/3 cup oats
1 cup water or milk
1 Tbsp flaxseed meal
Pinch of salt
2 Tbsp applesauce
1/2 apple, sliced
4 walnut halves, chopped
1 tsp red/brown sugar or sweetener or choice
optional: goji berries, chestnuts, macadamias, cinnamon
1) Combine oats, flax, and salt in a pot and whisk well. Add water.
2) Heat over medium for about 8 minutes, stirring often. When the mixture thickens and the liquid is absorbed, it is done. Stir in applesauce.
3) Pour into bowls and top with walnuts, apples, and any optional ingredients.
4) Sprinkle some red/brown sugar on top.
400 calories,15 g fat, 54 g carbs, 10 g fiber, 13 g protein. (for the whole recipe)
Super simple, super comforting, and super satisfying.
I actually made this for my parents this morning, except they were still asleep. But they still liked it, it was a nice change to the usual "not knowing what to eat for breakfast so i guess i'll have a yogurt and ooh look a pomegranate." AND I washed all the pots and cleaned up the mess I made YOUR WELCOME MOM AND DAD.
