Cabbage Latkes

As part of my mission to become better acquianted with the kitchen I volunteered to make a side dish for lunch. So I decided on a whim to latke-ify my favorite vegetable. And it was so simple, just three ingredients! They smell delicious while cooking too.
I made two variations, one with just cabbage and one with purple cabbage and a carrot. My dad preferred the purple cabbage, I liked the regular. Try both! Much healthier than normal fried potato latkes, and just as tasty. They are best served fresh off the pan and hot.

Cabbage Latkes
Ingredients:
  • 1 cup shredded cabbage
  • 1 small egg
  • salt
  • oil for cooking
Instructions:
Crack egg into a bowl, add a pinch of salt and beat well. Add shredded cabbage along with some salt and mix until egg is foamy and let sit for a couple minutes. Heat pan with oil, then carefully drop the mixture in the pan in 1/3 cups. Lightly press down on latkes and pan fry until set, then flip. Transfer to a paper towel on drain when finished. Enjoy!
