Cauliflower Carrot Patties

These are delightful. I love eating veggies in new ways and these flavorful patties definitely hit the spot! The cauliflower stays semi crunchy, the walnuts are surprisingly obvious, and the lemon adds a refreshing tone.  Eggs are a prominent flavor, but if you don't like eggs I think flax or chia eggs would work perfectly as a binder! As always sub what you want and play around with the ratios! Almonds or sunflower seeds for the walnuts,

Cauliflower Carrot Patties

Ingredients
1/2 small head cauliflower
1 large carrot, shredded
2 small eggs
1 Tbsp sesame seeds
2 Tbsp walnuts, chopped
2 Tbsp parsley, chopped 
1 tsp lemon juice
1/4 tsp salt
1/4 tsp pepper
2 cloves garlic, minced
Olive oil

Instructions
Chop the cauliflower until fine, or pulse in a food processor. I ended up with a little more than a cup full.
Squeeze water out from the carrots. 
Combine everything except garlic in a bowl and mix. 
In a pan, heat some oil and toast the minced garlic until fragrant and add to mixture. 
Drop spoonfuls (about 2 Tbsp) into oiled pan on low heat and cook 3 min, then flip and cook another minute. 
Transfer to plate and repeat with rest of batter. 
Serve hot.
