You know cooler weather is approaching when street vendors selling paper bags full of freshly roasted chestnuts start popping up! Warm, comforting, and a perfect snack to share on a chilly walk, chestnuts are one of the foods I look forward to most every autumn.
We actually prefer steaming our chestnuts in a pressure cooker rather than roasting them, as they are softer and easier to peel.
Steamed Chestnuts Recipe
1/2 lb chestnuts
1) Clean chestnuts.
2) Slit each chestnut to allow heat to escape during cooking. Cut a straight line across or cross-score with a sharp, serrated knife. Be careful!
3) Spread in one layer on pressure cooker tray, add a cup of water and cook for about 15 minutes.
4) Allow the steam to naturally escape before removing chestnuts.
5) Peel and enjoy!
Today's fall - inspired lunch: carrots, mushrooms, purple cabbage, sauteed pumpkin and peppers, and chestnuts!
