Today I hit 100K followers on Instagram! And it was sunny enough to wear shorts outside! So of course that called for celebration. And what better way to celebrate than with chocolate banana crepes?!
It's hard to believe these are actually healthy, but trust me. A combination of oats, egg, banana and dark chocolate can taste mindblowingly decadent.
My favorite kind of before & after.
Chocolate Banana Crepes
3/4 cup flour (whole wheat, oat, etc.)
1 cup - 1.5 cups milk or water, depending how thick you want your crepes (the more liquid the thinner)
1/2 tsp vanilla extract
1 Tbsp sweetener, optional
1/8 tsp salt
1-2 bananas, thinly sliced
1 ounce dark chocolate, melted
Mix crepe ingredients in a bowl.
Heat frying pan until very hot, pour a drop of oil and coat the bottom. Ladle in a small amount of batter, rolling the pan side to side to cover the bottom of the pan evenly with batter. Cook for 1-2 minutes, then flip and let it cook for another minute on the other side. Gently remove to a plate and repeat with remaining batter.
Stuff crepes with bananas and drizzle with chocolate.
I need to celebrate more often.
