How do you use leftover rice? Well here is what you should be doing with it. Crispy rice cakes! I used leftover black sticky rice but white rice works as well!
All you need is:
Leftover rice (cold)
Salt or soy sauce
Form 1/2 inch thick patties with the rice.
Heat a nonstick pan on medium with a drop of oil. Place rice cakes in one layer and pan fry for 1 minute or until it has a light sear, then flip. Add a dash of salt or soy sauce and let cook through until crispy on the edges but still soft on the inside.
I made little vegetable stacks (layered string beans, zucchini rounds, sweet potato, braised purple cabbage, walnuts) but you can just eat them as a side dish!
