This is so delicious eaten straight out of the oven. And it keeps getting better the longer it sits! I have deemed this my birthday cake for March...along with some creamy vanilla ice cream it'll be a fantastic way to turn 18!
Delicate crumbly crust on the outside, super dense and moist on the inside, studded by plump raisins and crunchy walnuts, this lightly sweetened cake is what makes babies laugh and rainbows shine.

Date and Walnut Loaf
1 cup dates, pitted and chopped
1 cup water
1/2 cup butter
1/4 cup brown sugar
1 teaspoon baking soda
1 1/2 cups whole wheat flour
1 egg, beaten
1 teaspoon vanilla extract
1 cup walnuts, chopped
1/4 cup raisins
Preheat oven to 350 degrees F (175 degrees C). Grease 9x5 inch loaf pan or line with parchment paper. In a saucepan over medium heat, bring dates and water to a boil. Stir in butter and sugar until melted. Remove from heat and stir in baking soda. Let cool for 10 minutes.
Place date mixture into a large bowl. Blend in flour, eggs and vanilla. Stir in chopped walnuts and raisins. Pour batter into pan.
Bake for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto wire rack or devour.
