Tell me that doesn't look incredible. This is the EASIEST RECIPE EVER. Now if you are looking for super light, fluffy, indulgent brunch pancakes these are not, but if you just want a simple, healthy oatcake you can whip up in less than 5 minutes may I recommend this recipe! Honestly they taste like oatmeal, but that's not bad thing! And all the more reason to go crazy with toppings.
Use any combination of dried fruit or nut and seeds. The fruit is the only sugar in the recipe so pick a sweeter type or add your favorite sweetener to the batter!
1/3 cup oat flour
3 Tbsp dried fruit and nuts (I used goji, sesame and peanuts)
1/3 cup liquid (water will work)
In a food processor blend nuts and dried fruit until fine, then mix everything together and let batter sit for 5 minutes. Cook in a nonstick pan on medium.
