Inside out REESES pancakes!
Please note: These are super moist, dense but fluffy, sweet, and so so delicious. You may want to eat these for breakfast lunch and dinner like I did.
1/2 cup oats
1/3 cup cold sweet potato (trust me)
2/3 cup almond milk
1 tsp maple syrup
Pulse oats into flour, then add everything else and blend.
Scoop about 1/4 of the batter into a separate bowl and whisk in 1 tsp
cocoa powder and sweetener. In the remaining batter blend in
2 Tbsp peanut butter and salt (must have!) to taste.
To cook, drop circles of peanut butter batter in a heated pan, then a
smaller layer of chocolate batter. Cook until set then flip. I made
Chocolate sauce: I just mixed yogurt, cocoa powder and maple syrup together, no exact amounts just do it to your taste
and pourability preference!
(More yogurt = thicker, more syrup = richer flavor)
