Ever since I had this dish at a restaurant last week I have not been able to get it out of my mind! Savory, buttery, hot and comforting the way only a big bowl of rice can be. What a great twist to spice up regular old rice!
You can leave off the egg to make it vegan, but I really wouldn't. I consider it a crucial component; the way the golden yolk spills like sauce covering the delicious rice is just culinary perfection. Make sure you use a quality sour kimchi you like, as it will impart a lot of flavor. Sub brown rice, add broccoli or peas, a serving of protein; you really can't go wrong!
Kimchi Fried Rice
1) Finely chop the kimchi.
2) Heat 2 Tbsp oil in a large skillet over high heat. Add kimchi and cook for 2-3 minutes until edges begin to crisp.
3) Add soy sauce and rice, stir thoroughly to combine. Cook until rice is warm and beginning to brown, around 5 minutes. Set aside.
4) In a different pan add 1 Tbsp oil and turn heat to medium. Crack egg(s) into skillet and sprinkle with a pinch of salt. Cover the pan and cook until white is set. Sprinkle with pepper (optional). 5) Scoop rice into bowls, top each with a fried egg, and sprinkle with scallions. Serve immediately!
Beyond delicious and definitely one of my favorite on-occasion meals! This combination of flavors is divine and really satisfies any craving for greasy fast food, only in a more wholesome manner.
