Cauliflower crust pizza is nothing new, and I've wanted to try it for a really long time. Except how does one bake a pizza without an oven? Well shocker turns out you don't need to. And for those times when you are craving pizza but don't want an entire pie? I got you covered.
Mini Cauliflower Pizzas
1 small head cauliflower
1/3 cup oats, blended into flour
1/4 tsp salt
1/2 tsp pepper
1 Tbsp olive oil
Toppings: hummus, pesto, sliced tomato, sauteed mushrooms, toasted walnuts, basil, etc.
Pulse cauliflower in a food processor until fine (I ended up with with about 2 cups worth). Pour into a large bowl and mix with oats, egg, salt and pepper. Divide into 3 equal portions.
Heat a nonstick pan on medium low, and add a teaspoon of olive oil and swirl to coat the pan. Place one portion in and press down lightly. Shape it into a circle about 1/2 inch thick (the crust is not too crumbly but it is fragile). Cook for 1-2 min.
Very gently, slide a spatula under the pizza and using another to stabilize, flip it and cook on the other side.
Add another tsp of oil before cooking each pizza.
Spread with sauce of choice and add toppings!
Makes 3 mini pizzas.
