Guess who ordered a food processor/blender two days ago! Guess what arrived yesterday afternoon? Guess who immediately chopped up some bananas and froze them.

I have so many ideas I have been dying to try! Like these pb&j inspired ice cream sandwiches. I haven't ordered any dates or powders yet so this recipe is made with easily accessible and cheap ingredients! That just means more for everyone. I always feel defeated reading novel-length recipes with a foreign, almost esoteric list of ingredients, so I hope this treat shows you that you absolutely don't need expensive raw nuts and dried fruits or superfood powders to make a delicious and nutritious dessert... that is healthy enough for breakfast!
PB&J Banana Ice Cream Sandwiches
2 Tbsp oats
1/3 cup peanuts
1/3 cup raisins
1/8 tsp salt
In a mini food processor pulverize oats into a flour consistency, then add all other ingredients and blend well until combined. Press into shallow pan and chill.
1 large ripe banana, chopped and frozen
1 tsp vanilla extract
Thaw banana for a couple minutes, then blend in a food processor until creamy.
Roll out cookie dough 1/4 inch thick and cut out circles (I used a wine glass). Fill with ice cream and freeze for 30 min.
Makes 5 sandwiches.
