I love purple sweet potatoes! If you've never tried them they are a bit drier starchier, and sweeter than orange sweet potatoes. Of course you don't need me to tell you the color is absolutely gorgeous! We had a bunch in the house so I decided to get creative and these were super delicious bars were born! Sweet base topped with a super creamy filling; this is definitely one of my new favorite desserts. Purple Sweet Potato Bars Base: 1/2 cup walnuts 1/2 cup dates 2 Tbsp shredded coconut Pinch of salt Top layer: 1 purple sweet potato (cooked and cooled) 1 Tbsp ground almonds 2+ Tbsp yogurt (or coconut cream) 1 Tbsp honey (optional) . Instructions: Blend all base ingredients together until sticky and press onto a plate. In a food processor, puree chunks of sweet potato until super creamy. Add almond meal and yogurt and blend again. At this point, taste and adjust. You may need to add more yogurt and honey, just stir in a bit at a time until it's perfect for you. Spread evenly across base layer and chill 2-3 hours.

This is my go-to summer drink! Blend up 2 cups watermelon, ice cubes, and a squeeze of lime. Refreshing and SO GOOD.

Just mix a container of Greek yogurt with some nuts and dried fruit (I used almonds and goji berries) spread on a plate, swirl in some vanilla and honey, then freeze for a few hours. So easy and my parents can't get enough! You must try. A perfect snack for a hot summer day! |
