Cauliflower fried rice -- a great nutrient dense replacement for rice or just a change of pace! It actually does resemble real rice and tastes just as good!
Cauliflower Fried Rice 1/2 small head cauliflower Salt and pepper 1 egg (or choice of protein) 2 cloves garlic, minced 1/2 onion, chopped 1 carrot, diced 1 cup veggies, diced (corn, broccoli, mushrooms, peas) 1/2 cup rice (optional) Soy sauce (optional) Scallions to garnish Chop cauliflower into big pieces and pulse a few times in the food processor until it resembles rice. Season with salt and pepper. Heat a skillet with some oil and scramble the egg. (Don't forget to add some salt!) Break into bite sized pieces and transfer to a plate. Add another drop of oil to the pan and add garlic. Let sizzle for a minute then add onion, carrot, and other veggies. Cook for 5 minutes. Dump in riced cauliflower (and rice if using) and heat through, then stir in egg. Season to taste, and add a dash of soy sauce if you want. Scoop onto a plate and serve!

Apple ring pancakes! Tastes like hot apple pie in pancake form. Instead of adding diced apple to the batter, slice the apple into rings and double dip! The apples stay slightly crunchy, which is the perfect contrast to the soft cinnamon-y pancake!
Apple Ring Pancakes 1 small apple, cored and sliced thinly 1/2 cup oats, blended into flour 1/4 tsp cinnamon 1/2 cup milk or hot water Pecans or walnuts Yogurt Honey Mix together oats, cinnamon, and milk. Dip the apple slices in the batter then cook. When cooked, dip again and cook once more . Serve with yogurt and chopped walnuts and more apple. Brownie Fudge. Divine. Chocolaty, smooth, and unbelievably rich. This melt-in-your-mouth brownie fudge is so easy to make (2 minutes!), vegan, gluten free, almost fat free and nut free, which makes this the perfect treat for those allergic to nuts! This tastes like a brownie but the texture is like fudge, hence the name. In other words, you really really REALLY should try it. Even my parents, who aren't huge fans of sweet things, LOVED THIS. They said it was the best thing I've ever made which I don't know how I feel about, but that definitely says something! Brownie Fudge
1/2 cup pitted dates 1/2 cup oats, blended into flour 1/3 - 1/2 cup cocoa powder (1/3 cup for hershey's bar taste, 1/2 for dark chocolate) 1/4 cup yogurt or almond milk 1/4 tsp cinnamon Dash of salt Blend dates in food processor, then add rest of ingredients in order. Transfer to plate and chill for 30 minutes or until set! Double / halve recipe as needed. |
