My favorite easy meal. We almost always have leftover rice in the house and along with some vegetable odds and ends it makes a perfect meal topped off with a runny egg. Delicious comfort food.
Egg Fried Rice
1 tsp oil
1/2 tablespoon oil
1 clove garlic, minced
1 cup cold leftover rice
1 Tbsp soy sauce (to taste)
1/4 tsp pepper
chopped green onions (optional)
Heat oil in a large skillet until sizzling. Add egg and scramble, then set aside on another plate.
Add 1/2 Tbsp oil to skillet and toast garlic until fragrant. Add any veggies you are using now and let cook for a bit before adding rice.
Dump in rice, soy sauce, and black pepper and stir fry for about 5 minutes. Taste and adjust!
Stir in the egg last and top with green onions if using.
