Toasted Sesame Oatmeal

My favorite sweet toasted sesame oatmeal. With a plethora of delicious toppings: banana, goji, raisins, sliced almonds, walnuts, and pumpkin seeds. A nutrient packed power breakfast!
This tastes like the filling of a tangyuan, aka sunshine and unicorns. Imagine roasted candied nuts, but with sesame seeds instead. Rich, decadent and aromatic. Just toasted fragrant sweetness for all really.

Ingredients*
1/4 cup sesame seeds 
2 Tbsp walnuts
2 Tbsp oatmeal
2 dried medjool date or jujube (or 1 Tbsp granulated sweetener)
1/3 cup oatmeal
1 cup + 2 Tbsp water or milk
1 Tbsp flax meal (optional)
1/8 tsp salt
1 Tbsp sliced almonds
1/2 Tbsp raisins
Choice of toppings

Instructions
Heat a nonstick pan on low and add sesame seeds, walnuts, and oatmeal. Toast until fragrant, taking care not to burn them.
Pulse toasted ingredients and dates (or other sweetener) in a food processor until pulverized. Set aside.
Combine oatmeal, flax, and salt in a pot. Add water and bring to a boil.
When liquid is almost absorbed, stir in 1-2 Tbsp of the sesame mixture, almonds, and raisins and mix thoroughly.
Pour into a bowl and top with desired toppings! I stirred in half a banana, goji berries, crunchy pepitas, more walnuts and a splash of milk.
