Inside out REESES pancakes!
Please note: These are super moist, dense but fluffy, sweet, and so so delicious. You may want to eat these for breakfast lunch and dinner like I did. Pancakes: 1/2 cup oats 1/3 cup cold sweet potato (trust me) 2/3 cup almond milk 1 tsp maple syrup Pulse oats into flour, then add everything else and blend. Scoop about 1/4 of the batter into a separate bowl and whisk in 1 tsp cocoa powder and sweetener. In the remaining batter blend in 2 Tbsp peanut butter and salt (must have!) to taste. To cook, drop circles of peanut butter batter in a heated pan, then a smaller layer of chocolate batter. Cook until set then flip. I made three pancakes. Chocolate sauce: I just mixed yogurt, cocoa powder and maple syrup together, no exact amounts just do it to your taste and pourability preference! (More yogurt = thicker, more syrup = richer flavor)

Hearty yet light, flavorful savory crepes perfect for lunch or even breakfast if you're so inclined! Spinach and potato pair fabulously as a filling for this eggy crepe, but you can add mushrooms and cheese or onions. This meal consists of a perfect combination of protein, carbs, and fat for a delicious, nutritious meal. Spinach & Potato Crepes Crepes
1/2 cup oats, blended 1/8 tsp salt 1 egg 1 tsp oil 2/3 cup almond milk :: whisk everything together and let sit a bit while you prepare the filling. Filling 1 tsp oil 2 cloves garlic, minced spinach 1/2 cup mashed potatoes salt and pepper cheese, optional :: heat oil in a pan, then add garlic, salt and pepper. add in spinach, cook until wilted, season to taste then remove to a pan. :: in a nonstick pan, heat a drop of oil and scoop 1/4 cup measures of batter. cook 30 seconds, then add a layer of potatoes, then spinach in one quarter of the crepe. fold over, then into quarters. repeat with rest of crepes! makes 4. Today I hit 100K followers on Instagram! And it was sunny enough to wear shorts outside! So of course that called for celebration. And what better way to celebrate than with chocolate banana crepes?! It's hard to believe these are actually healthy, but trust me. A combination of oats, egg, banana and dark chocolate can taste mindblowingly decadent. My favorite kind of before & after. Chocolate Banana Crepes 3/4 cup flour (whole wheat, oat, etc.) 1 cup - 1.5 cups milk or water, depending how thick you want your crepes (the more liquid the thinner) 1 egg 1/2 tsp vanilla extract 1 Tbsp sweetener, optional 1/8 tsp salt 1-2 bananas, thinly sliced 1 ounce dark chocolate, melted Mix crepe ingredients in a bowl. Heat frying pan until very hot, pour a drop of oil and coat the bottom. Ladle in a small amount of batter, rolling the pan side to side to cover the bottom of the pan evenly with batter. Cook for 1-2 minutes, then flip and let it cook for another minute on the other side. Gently remove to a plate and repeat with remaining batter. Stuff crepes with bananas and drizzle with chocolate. Devour. I need to celebrate more often.
