These are so yummy and fun to take! My mom and I sometimes will just go to the grocery store and pick out a whole bunch of veggies and flavorings to stuff inside wrappers (when we are too lazy to make them ourselves). Delicious, healthy, and a treat to eat. Vegetarian Potstickers
1 cup each
1 package gyoza wrappers cilantro sesame oil salt water Saute onions in a bit of oil, then add mushrooms, carrots, cabbage, and chives in that order. Salt and pepper to taste! After its done, let cool and add sesame oil and cilantro. Wrap in dumpling wrappers! (You may want to watch a video if you've never done it before). To cook, heat a nonstick pan, coat with oil and add a single layer of dumplings. Sear for a minute, then add a 1/3 cup of water, cover, then steam. The water should completely evaporate (watch closely); this will leave the dumplings crispy on the bottom! Serve hot with some soy sauce or tamari for dipping!

1/2 cup oats, blended (you can use any flour) 1 Tbsp cocoa powder 1/2 cup + 1 Tbsp milk or water 1 tsp sweetener Mix well and cook on a nonstick pan over medium heat. I used about 1 Tbsp measures so I could stack them up really high! Layered with bananas and topped with a chocolate yogurt sauce and honey. and a side of flowers my dad snipped this morning! Sauce is simply cocoa powder, yogurt, and honey mixed. HOMEMADE "PIZZA" ROLLS.
Oh guys...how I wish you could reach through the screen and grab one of these!! But since you can't I'll just have to give you the recipe. I was planning to save these for the ebook BUT they were too good not to share! Pizza "crust" 1/2 cup flour of choice 1/2 cup water or almond milk 1 egg Salt, pepper, and oregano Mix everything together in a bowl and cook half the batter at a time in a nonstick pan, low heat about 2 minutes on each side. It should resemble a thick crepe, very soft and pliable! Spread with tomato sauce (I cheated and blended up tomatoes, garlic, basil, some olive oil, celery leaves and oregano) and mozzarella cheese (I actually used marinated firm tofu sliced thinly) then just roll and slice! The crust actually stays together extremely well, such a win. And there you have it!! The perfect 5 minute snack! My mom and me loved these. Pan crust idea adapted from the incredible Ashley of @edibleperspective fame! I just added spices to give it more of a pizza flavor. |
